Let the COVID chronicles of things you can make with overripe bananas continue. This may quite possibly be the most delicious thing I’ve made since 2020 began, Oven Baked Banana Donuts. These Baked Banana Donuts are absolutely irresistible, they are soft, airy and toddler approved! Let’s be honest… it’s still a donut, and may not be the healthiest thing in the world but what kind of toddler doesn’t approve donuts for breakfast?
If you haven’t made donuts before, don’t be nervous. I am, for the most part, a terrible baker. I much prefer cooking because I can be more improvisational and liberal with my ingredient choices. Making these donuts are simple, it requires a donut pan, zip lock bag, one mixing bowl, and a few simple ingredients, and in 20 minutes in you have a delicious mini donut treat for both kids and adults!
Baked Banana Donuts Recipe
Ingredients – This recipe makes 12 mini donuts – You will need a donut pan for this recipe.
- 2 very ripe mashed bananas
- 3/4 cup all-purpose flour
- 3 tsp sugar
- 1 egg
- 2 tbsp melted butter
- 1/2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- dash of cinnamon
- pinch nutmeg
- pinch salt
GLAZE
- 1 cup powdered sugar
- 2 tsp vanilla extract
- 2 tbsp milk
1.) Preheat the oven at 350 degrees
2.) Smash bananas in a mixing bow.
3.) Mix all ingredients together slowly.
4..) Pour batter into a zip lock bag and cut a half inch off the corner of the bag to pipe the batter into the donut pan.
5.) Spray the donut pan with a non-stick baking spray and pipe the batter into the donut pan.
6.) Bake donuts at 350 for 10 minutes (be careful not to overcook, this can lead to dry donuts)
7.) While donuts are baking make the glaze. Mix together powered sugar, vanilla extract and milk until glaze is a toothpaste like consistency.
7.) Let donuts rest for 10 minutes. Top the donuts with a glaze, chocolate, topping of choice! Dip donuts face down into glaze and lay on wire baking tray or parchment paper. Optional: Top with walnuts, chocolate chips, or sprinkles!
To keep the donuts relatively simple, I topped half of the batch with powdered sugar and dipped the other half of the donuts in a simple glaze and added a walnut for a little crunch. These donuts surpassed my expectations and my only regret was not making more! The next time you have some overripe bananas on your counter, make this recipe, you will love every amazing bite!
